The Ceremony
Gongfu ("skillful effort") tea involves the meticulous preparation of tea: heating the kettle, warming the teapot and cups, adding tea leaves, steeping for precise seconds, and pouring in a ritualized sequence. Each movement is deliberate, each moment to be savored.
Tea Varieties
Chinese tea is classified by processing method: green (绿茶, lu cha), white (白茶, bai cha), yellow (黄茶, huang cha), oolong (乌龙茶, wu long cha), red (红茶, hong cha, known in the West as "black tea"), and dark (黑茶, hei cha).
